Cheesy Lasagna

This is what I made for dinner last night. My family loves lasagna!! It's simple and not as time consuming as you would think. My children helped with the layering of noodles :)

1 box Lasagna noodles
3 lbs ground beef
1 egg
1 small onion
1 big jar of tomato sauce (i prefer Ragu)
1 pint (or more) ricotta cheese
3 cups shredded mozzarella cheese
salt and pepper

Preheat oven 350F.
First, in a large pan brown the ground beef at medium heat, drain oil. Dice onions and add to the ground beef, simmer on low heat for 5 minutes. Add tomato sauce, cover and let simmer on low heat. In a large pot, boil water and add a little oil (so the noodles do not stick together) after it starts boiling add lasagna noodles.
Let boil for about 10 minutes or until tender. Remove pot, instead of draining water, place pot in sink and let cold water run in the pot. This will cool the noodles and prevent noodles from sticking together.

As the noodles cool, put your ricotta cheese in a bowl and add egg. mix well. I prefer to use a glass pan, but you can use any non-stick baking pan. Drain almost all water from the pot of noodles. Starting with noodles, place 3 lasagna noodles, then add ricotta cheese. Using a spoon or your finger spread the ricotta cheese on all 3 noodles. Next, place another layer of lasagna noodles. This time you will spread your tomato sauce on the layer, you will repeat layers ricotta cheese, noodles, sauce, etc. The final layer should be tomato sauce. Spread shredded mozzarella cheese on top on the tomato sauce.
Bake for 30-40 minutes.
